Yogurt & Peanut Butter Mousse Cups

Ingredients

  • 2 cups Plain Greek Yogurt
  • 1/3 cup All Natural Peanut Butter
  • 1/4 cup Raw Honey
  • 1/2 tsp Vanilla Extract
  • 1/2 cup Dark Chocolate Chips
  • 1 tsp Coconut Oil
  • 1/4 cup Raw Peanuts (chopped)

Directions

  1. In a stand mixer with the whisk attachment, combine the yogurt, peanut butter, honey, and vanilla.
  2. Whip the mixture until smooth and creamy, then portion it into containers or jars.
  3. Melt the chocolate and coconut oil in a saucepan on low or in the microwave for 30-second intervals.
  4. Pour the chocolate over the yogurt and top with peanuts. Place in the fridge for one hour or until the chocolate has set. Serve and enjoy!
