Ingredients
- 1/2 cup Wild Rice (dry)
- 3 tbsps Chia Seeds
- 1/2 cup Water
- 1/4 cup Maple Syrup (divided)
- 1 cup Raspberries
- 1 cup Blueberries
- 2 tbsps Sunflower Seeds (toasted)
Directions
- Cook the rice according to the package directions. Set aside to cool for 10 to 15 minutes.
- Meanwhile, combine the chia seeds, water, and 1/4 of the maple syrup in a bowl. Stir well and let sit for eight to 10 minutes until thickened.
- Transfer the rice to a blender or food processor with the remaining maple syrup. Pulse until smooth or to your preferred consistency.
- Add the chia mixture and pulse briefly until just combined. Refrigerate for at least 15 minutes to set.
- Divide the pudding evenly between bowls and top with fresh berries and sunflower seeds. Enjoy!
