Wild Rice Pudding with Fresh Berries

Ingredients

  • 1/2 cup Wild Rice (dry)
  • 3 tbsps Chia Seeds
  • 1/2 cup Water
  • 1/4 cup Maple Syrup (divided)
  • 1 cup Raspberries
  • 1 cup Blueberries
  • 2 tbsps Sunflower Seeds (toasted)

Directions

  1. Cook the rice according to the package directions. Set aside to cool for 10 to 15 minutes.
  2. Meanwhile, combine the chia seeds, water, and 1/4 of the maple syrup in a bowl. Stir well and let sit for eight to 10 minutes until thickened.
  3. Transfer the rice to a blender or food processor with the remaining maple syrup. Pulse until smooth or to your preferred consistency.
  4. Add the chia mixture and pulse briefly until just combined. Refrigerate for at least 15 minutes to set.
  5. Divide the pudding evenly between bowls and top with fresh berries and sunflower seeds. Enjoy!
