Whipped Feta Dip with Roasted Olives

Ingredients

  • 3/4 cup Assorted Olives
  • 4 Garlic (clove, peeled, smashed)
  • 3 tbsps Extra Virgin Olive Oil
  • 1/2 tsp Oregano
  • 1 cup Feta Cheese (room temperature)
  • 1/3 cup Ricotta Cheese (room temperature)
  • 1 tsp Lemon Juice
  • 1/4 tsp Chili Flakes

Directions

  1. Preheat the oven to 425ºF (220ºC).
  2. In a small baking dish, toss together the olives, garlic, oil, and oregano. Transfer to the oven and bake for 20 minutes until bubbling and the garlic is softened and browned slightly.
  3. Meanwhile, add the feta, ricotta, and lemon juice to a food processor and blend on high until smooth and creamy.
  4. Add the whipped feta to a serving bowl. Top with olives and garlic. Add a drizzle of the cooking oil and chili flakes. Enjoy!
