Ingredients
- 2 tbsps Extra Virgin Olive Oil
- 1 Garlic (clove, chopped)
- 1/2 Yellow Onion (large, chopped)
- 2 tsps Arrowroot Powder
- 1/2 cup Unsweetened Almond Milk
- 1/2 cup Vegetable Broth
- 2 cups Baby Spinach
- 1 1/2 cups Cauliflower Rice
- 1 tbsp Chives (chopped)
Directions
- Preheat the oil in a large skillet over medium-high heat. Add the garlic and the onions. Stir and cook for approximately two minutes or until tender.
- Add the arrowroot and stir to coat. Add the milk and stir then add the broth, stirring slowly to combine. Add the spinach, stirring constantly. Cook for two minutes or until wilted.
- Stir in the cauliflower rice and allow to cook for three to five minutes or until warmed through.
- Divide evenly between bowls, top with chives, and enjoy!
