Ingredients
- 1/2 Yellow Onion (medium, chopped)
- 2 Garlic (clove, minced)
- 1/2 tsp Smoked Paprika
- 1 cup Tomato Sauce
- 1 1/2 cups White Navy Beans (drained, rinsed)
- Sea Salt & Black Pepper (to taste)
- 1/4 cup Ricotta Cheese
- 2 tbsps Parsley (chopped)
Directions
- Heat a pan over medium heat. Add the onion with a splash of water and cook for about five minutes or until soft. Stir occasionally.
- Add the garlic and paprika, stir and cook for another minute. Add the tomato sauce and beans. Stir and season with salt and pepper.
- Cover the pan with a lid, and simmer on low heat for 10 to 12 minutes.
- Remove the lid and spoon the ricotta cheese on top. Cover with a lid again and cook for another five minutes or until everything is heated through and flavors have combined.
- Top with parsley and divide evenly between plates or bowls. Enjoy!
