One Pan Beans & Ricotta

Ingredients

  • 1/2 Yellow Onion (medium, chopped)
  • 2 Garlic (clove, minced)
  • 1/2 tsp Smoked Paprika
  • 1 cup Tomato Sauce
  • 1 1/2 cups White Navy Beans (drained, rinsed)
  • Sea Salt & Black Pepper (to taste)
  • 1/4 cup Ricotta Cheese
  • 2 tbsps Parsley (chopped)

Directions

  1. Heat a pan over medium heat. Add the onion with a splash of water and cook for about five minutes or until soft. Stir occasionally.
  2. Add the garlic and paprika, stir and cook for another minute. Add the tomato sauce and beans. Stir and season with salt and pepper.
  3. Cover the pan with a lid, and simmer on low heat for 10 to 12 minutes.
  4. Remove the lid and spoon the ricotta cheese on top. Cover with a lid again and cook for another five minutes or until everything is heated through and flavors have combined.
  5. Top with parsley and divide evenly between plates or bowls. Enjoy!
