Ingredients
- 2 tbsps Extra Virgin Olive Oil
- 1 tbsp Red Wine Vinegar
- 1/2 tsp Moroccan Spice Blend
- 1/2 Navel Orange (juiced)
- 1/4 cup Shallot (finely chopped)
- 2 1/2 cups Lentils (cooked)
- 4 stalks Celery (chopped)
- 1/4 cup Dried Apricots (chopped)
- 1/4 cup Almonds (toasted, chopped)
- 1/2 cup Cilantro (chopped)
Directions
- Add all the ingredients to a large bowl and mix to combine. Divide evenly between bowls or onto plates and enjoy!
