Mediterranean Roasted Tomato & Chickpea Bowl

Ingredients

  • 1/2 cup Quinoa (dry, rinsed)
  • 1 cup Cherry Tomatoes
  • Sea Salt & Black Pepper
  • 1 tbsp Extra Virgin Olive Oil (divided)
  • 1/2 cup Chickpeas (cooked)
  • 2 cups Baby Kale
  • 1/2 cup Hummus
  • 1 tbsp Mint Leaves (chopped)
  • 1 tbsp Parsley
  • 1 tsp Everything Bagel Seasoning

Directions

  1. Preheat the oven to 350ºF (175ºC) and line a baking sheet with parchment paper.
  2. Cook the quinoa according to the package directions.
  3. Meanwhile, place the tomatoes on one side of the baking sheet and toss with salt, pepper, and half of the oil. On the other side, toss the chickpeas with the remaining oil, salt, and pepper. Cook in the oven for 30 to 40 minutes, until the tomatoes burst and caramelize and the chickpeas are crispy. Let cool slightly.
  4. To assemble, divide the quinoa and kale evenly between bowls. Top with hummus, cooked tomatoes, chickpeas, mint, and parsley. Sprinkle with everything bagel seasoning and enjoy!
