Herbed Tomato & Cottage Cheese Bowl

Ingredients

  • 1/2 cup Cherry Tomatoes (quartered)
  • 1 stalk Green Onion (chopped)
  • 1 1/2 tsps Capers (drained)
  • 2 tbsps Parsley (chopped)
  • 2 tbsps Basil Leaves (chopped)
  • 1 1/2 tsps Extra Virgin Olive Oil
  • Sea Salt & Black Pepper (to taste)
  • 1 cup Cottage Cheese
  • 1 slice Whole Grain Bread (toasted)

Directions

  1. In a bowl, combine the tomatoes, onion, capers, parsley, basil, oil, salt, and pepper. Gently mix and let marinate for 10 minutes.
  2. Add the cottage cheese to a bowl or plate. Top with marinated tomatoes and serve with toast. Enjoy!
