Cucumber & Edamame Salad

Ingredients

  • 1 tbsp Extra Virgin Olive Oil
  • 1 1/2 tsps Apple Cider Vinegar
  • 2 tbsps Cilantro (chopped)
  • Sea Salt & Black Pepper (to taste)
  • 1/2 Cucumber (large, sliced)
  • 1 cup Frozen Edamame (thawed)
  • 1/4 cup Almonds (chopped)

Directions

  1. In a bowl, whisk together the oil, vinegar, cilantro, salt and pepper.
  2. Add the cucumber, edamame, and chopped almonds. Stir well to combine. Divide evenly between bowls or plates and enjoy!
