Ingredients
- 1 tbsp Extra Virgin Olive Oil
- 1 1/2 tsps Apple Cider Vinegar
- 2 tbsps Cilantro (chopped)
- Sea Salt & Black Pepper (to taste)
- 1/2 Cucumber (large, sliced)
- 1 cup Frozen Edamame (thawed)
- 1/4 cup Almonds (chopped)
Directions
- In a bowl, whisk together the oil, vinegar, cilantro, salt and pepper.
- Add the cucumber, edamame, and chopped almonds. Stir well to combine. Divide evenly between bowls or plates and enjoy!
