Crispy Chickpea & Avocado Toast

Ingredients

  • 1 cup Chickpeas (cooked)
  • 1 1/2 tsps Extra Virgin Olive Oil
  • 1/2 tsp Cumin
  • 1/4 tsp Garlic Powder
  • 1/4 tsp Smoked Paprika
  • 1/4 tsp Sea Salt (plus more for garnish)
  • 1 Avocado (medium)
  • 2 slices Whole Grain Bread (toasted)
  • 1/2 Lemon (medium, juiced)
  • 2 tbsps Cilantro (chopped, optional)

Directions

  1. Preheat the oven to 400ºF (205ºC) and line a baking sheet with parchment paper.
  2. Add the chickpeas, oil, cumin, garlic powder, smoked paprika, and salt to the prepared baking sheet. Mix well to coat.
  3. Cook in the oven for 20 to 25 minutes or until crispy.
  4. When ready to serve, mash the avocado evenly between the slices of toast. Top with roasted chickpeas and drizzle with lemon juice. Season with more salt and cilantro, if desired.
  5. Serve immediately and enjoy!
