Ingredients
- 1 cup Chickpeas (cooked)
- 1 1/2 tsps Extra Virgin Olive Oil
- 1/2 tsp Cumin
- 1/4 tsp Garlic Powder
- 1/4 tsp Smoked Paprika
- 1/4 tsp Sea Salt (plus more for garnish)
- 1 Avocado (medium)
- 2 slices Whole Grain Bread (toasted)
- 1/2 Lemon (medium, juiced)
- 2 tbsps Cilantro (chopped, optional)
Directions
- Preheat the oven to 400ºF (205ºC) and line a baking sheet with parchment paper.
- Add the chickpeas, oil, cumin, garlic powder, smoked paprika, and salt to the prepared baking sheet. Mix well to coat.
- Cook in the oven for 20 to 25 minutes or until crispy.
- When ready to serve, mash the avocado evenly between the slices of toast. Top with roasted chickpeas and drizzle with lemon juice. Season with more salt and cilantro, if desired.
- Serve immediately and enjoy!
