Ingredients
- 1 1/4 cups Unsweetened Almond Milk
- 2 tsps Lemon Juice
- 11 ozs Unbleached All Purpose Flour
- 1/2 cup Brown Sugar
- 2 tsps Baking Powder
- 1 tsp Cinnamon
- 1/2 tsp Ground Ginger
- 1/4 tsp Sea Salt
- 1/3 cup Avocado Oil
- 1 tsp Vanilla Extract
- 2 Pear (medium, finely diced)
Directions
- Preheat the oven to 350ºF (175ºC) and line a muffin tray with liners.
- Combine the milk and lemon juice in a small bowl and set aside.
- In a large bowl mix together the flour, sugar, baking powder, cinnamon, ginger, and salt.
- Add the milk mixture, oil, and vanilla to the dry ingredients and stir with a spatula until just combined. Do not over mix. Fold in the pears.
- Divide the batter evenly between muffin cups. Bake for 22 to 25 minutes or until firm to the touch and a toothpick inserted comes out clean. Let the muffins cool in the pan for 10 to 15 minutes before removing and transferring to a cooling rack to cool completely. Enjoy!
