Air Fryer Cajun Fish Taco Bowls with Quinoa

Ingredients

  • 1/3 cup Quinoa (dry, rinsed)
  • 1 Cod Fillet (patted dry, cubed)
  • 2 tsps Extra Virgin Olive Oil
  • 1 tsp Cajun Seasoning
  • Sea Salt & Black Pepper (to taste)
  • 1/3 cup Plain Greek Yogurt
  • 2 tbsps Cilantro (finely chopped)
  • 1 tbsp Lime Juice
  • 3 cups Green Cabbage (finely shredded)
  • 1 Avocado (medium, sliced)

Directions

  1. Cook the quinoa according to the package directions.
  2. Preheat the air fryer to 400°F (205°C). Place the cod in a bowl and drizzle with oil, cajun seasoning, salt, and pepper. Toss to coat.
  3. Transfer the cod to the air fryer basket and cook for five to six minutes or until cooked through, flipping halfway.
  4. Meanwhile, in a medium bowl, mix together the yogurt, cilantro, and lime juice. Season with salt and pepper. Add the cabbage to the yogurt mixture and toss to coat.
  5. Divide the quinoa, cod, cabbage, and avocado evenly into bowls. Enjoy!
